      <description><![CDATA[竹笋炒肉（Bamboo shoots fry meat）:


　　竹笋（bamboo shoot），猪肉（meat)，淀粉(starch)，料酒(rice wine)，糖(sugar)，生抽(Soya Light )，老抽(Soya Dark )，蒜(garlic)


　　1竹笋切片，肉切片，肥肉另外放置待用，瘦肉用糖，盐，油，老抽和淀粉腌制半个小时，蒜拍碎
　　2锅烧热，不用放油，把竹笋放进锅里，加少许盐，翻炒一分钟
　　3锅里放少许油，烧至4成热，把肥猪肉放进去炒至微微出油，放进蒜米爆香，把腌制好的肉片放进去炒至肉色发白
　　4把竹笋倒进锅里，加生抽炒匀即可。

tips:　1笋是炒之前要焯水去掉涩味
　　2炒制竹笋的目的是为了去掉部分水分，令其口感更脆
　　3腌制肉片的油不可烧得过热，四成热即可。
